Rainbow Coleslaw
A crunchy, healthy, and colorful addition to any cookout, this rainbow coleslaw will fast become a favorite side to any cookout or BBQ you throw!

Ingredients:
1 small head of green cabbage, shredded
1 small head of red cabbage, shredded
2 medium carrots, peeled, and shredded
2 large unpeeled Honey Crisp apples, cored and shredded
2 cups full-fat mayonnaise
2 tbsp. apple cider vinegar
1 tbsp. real honey or pure maple syrup
1 tbsp. white sugar
To Garnish (optional):
2-3 scallions, chopped
Directions:
- In a small bowl, whisk together the apple cider vinegar, mayonnaise, maple syrup, and sugar, to make the coleslaw dressing.
- Place all the shredded and thinly sliced veggies in a very large glass bowl and pour over the dressing, tossing well to combine.
- Cover with cling wrap, and chill for at least 1 hour.
- Garnish with chopped scallions (optional) and serve.
